Campfire Crumble (Gluten Free)

A simple and delicious campfire dessert with a crispy almond-oat topping, perfect for outdoor cooking.

Ingredients (Serves 4-6)
For the Filling
      500g frozen mixed berries
      1 tin (400g) Pink Lady apples (or use fresh)
      1 tbsp cornflour
      ½ tsp cinnamon
      ½ tsp vanilla extract
      ½ cup brown sugar
      Pinch of salt
      Zest of 1 lemon
      Juice of ½ lemon
For the Crumble Topping (Gluten-Free)
      3 cups almond meal
      2 cups rolled oats
      ½ cup brown sugar
      1 pinch salt
      200g butter, diced
      1 egg yolk
Instructions
1. Prepare the Filling
In a large bowl, combine frozen berries, canned apples, cornflour, cinnamon, vanilla extract, brown sugar, salt, lemon zest, and lemon juice.
Stir well until the mixture starts forming a light syrup.
Transfer the mixture into a cast iron pan or camp oven lid.
2. Make the Crumble Topping
In a separate bowl, combine almond meal, oats, brown sugar, and salt.
Add diced butter and rub it into the mixture using your hands until it resembles coarse breadcrumbs.
Add the egg yolk and mix until a dough-like crumble forms.
3. Assemble & Cook Over the Fire
Evenly crumble the topping over the berry mixture.
Place the pan over a campfire or hot coals.
Cover with a cast iron lid and place additional hot coals on top.
Cook for 30 minutes, or until the filling is bubbling and the top is golden brown.
4. Serve & Enjoy
Remove from heat and let it cool slightly.
Serve warm with vanilla ice cream for the ultimate campfire dessert.
Pro Tip:
For extra crunch, add crushed nuts or coconut flakes to the topping.
