The Method

Let's Get Cooking.

Four steps to a warm, crunchy, berry-filled campfire dessert.

  1. Prepare the Filling

In a large bowl, combine the frozen berries, apples, cornflour, cinnamon, vanilla extract, brown sugar, salt, lemon zest and lemon juice. Stir well until the mixture begins to form a light syrup. Transfer everything into a cast iron pan or camp oven lid.

  2. Make the Crumble Topping

In a separate bowl, combine the almond meal, rolled oats, brown sugar and salt. Add the diced butter and rub it through with your fingertips until the mixture resembles coarse breadcrumbs. Add the egg yolk and mix until a crumbly dough forms.

  3. Cook Over the Fire

Crumble the topping evenly over the berry mixture. Place the pan over the campfire or hot coals, cover with a cast iron lid and carefully add hot coals on top. Cook for approximately 30 minutes, until the filling is bubbling and the topping is golden brown. Check regularly to avoid burning.

  4. Serve It Up

Carefully remove the pan from the heat and allow the crumble to cool slightly. Serve warm, preferably with a generous scoop of vanilla ice cream. Good luck stopping at one bowl.

Luke's Pro Tip

Want a bit more crunch? Add some crushed nuts or coconut flakes to the crumble topping before cooking. A simple addition that makes a bloody good dessert even better.
